Mini Peanut Butter Cookies

Ingredients:

  • 3 Tbsp Peanut Butter (wet)
  • 3 Tbsp Raw Honey (wet)
  • 1.5 Tbsp Natural Butter (wet)
  • 1/4 cup Organic Thick Cut Oatmeal (dry)
  • 1/4 cup Walnuts (dry)
  • 2 Tbsp Organic Steel Cut Oats (dry)
  • 2 Tbsp Quinoa Flour (dry)
  • 1/8 tsp Baking Soda (dry)
  • 1/8 tsp Sea Salt (dry)

Directions:

  • Preheat oven to 350F
  • In a food processor, grind the oatmeal and the walnuts into flour
  • Mix all wet ingredients in a mixer - make sure that the mixture is creamy
  • Add in all the dry ingredients into the mixture of wet
  • On a baking sheet (parchment paper cover works very well), create your mini cookie balls - about 1/2 Tbsp size
  • Bake for 8 minutes
  • Let it cool down for about 5 minutes before you take your first bite
